I am a big big fan of Italian food and Italian herbs. If I have to cook any food other than Indian I will definitely choose Italian. After blogging for some time I have been always interested in taking part in cooking events and one such is The Del Monte Blogger Recipe Carnival announced in Indiblogger site . Probably only after Del Monte ‘s launch in India ,the usage of Italian food in our day to day life has shown a tremendous popularity.
I was introduced to Del Monte through their juices and now the products have a wide spectrum from sauces to salsa’s to olives to pasta’s.
I buy at least one or the other Del Monte product every month and Its always there in my pantry. Now we don’t have to goto a fancy dining to eat Italian, Thanks to Del Monte for making it available from Italy to our home
My contribution to this carnival is my All Veggie Pasta
My simple Veggie-Pasta with Cajun spiced potatoes
1 cup cooked (Al Dante )Del Monte Pasta (Penne Rig ate)
3 tsp Olive oil
1 cup Pasta sauce
1/3 cup green Olives ( Del Monte can be used)
1/3 cup chopped eggplant
1/2 cup chopped red onion
1/3 cup broccoli
1/3 cup green peas
1/3 cup chopped Zucchini
1/4 tsp dried Oregano
1 sage leaf
1/4 tsp rosemary (Optional)
Cheese (Parmesan) or mozerella bits
Chopped parsley or basil to garnish
For Cajun Potatoes
2 medium sized boiled potatoes
Cajun spice mix
Freshly ground pepper
Olive oil to roast
salt to taste
How I made them :
Saute the sage ,onion ,peppers in little olive oil
Add veggies one by one and fry them till they get caramelized
Add salt to taste as and when you add veggies
Add pasta sauce and little bit of pasta water
Add dried herbs.
Let it cook for 5 minutes and add cooked pasta
Let it simmer for 10 more minutes.
Serve with fresh basil or parsley leaves and grated Parmesan or mozzarella bits
You can even add little of extra virgin olive oil before serving.
Cut potatoes into medium cubes and saute in little of olive oil
Add salt to taste
