60 % of Rajasthan is a desert and it has extreme climatic conditions..because of these reasons Rajasthan has scarcity of Vegetables in summer..Inspite of these people there make such a good food U wont even realize that there is scarcity of Vegetables…
My mom used to prepare all kinds of Rajasthani food to name few Jawar ki roti , Gatte ki Sabji , Dahi Chane ki Sabji,Daal bhaati Churma , Rabadi etc…. I know what are u thinking now,,, What this post is all about ??? Well .. Well .. Well… This is about one of my favorite food..`” Daal Bhati “
And I am gonna post this Yummy yummy dish’s recipe now..
Daal is generally called Panchmel(combi of 5) Daal in Rajasthan
Panchmel Daal Ingredients :
1/4 cup Toor Daal
1/4 cup Green Moong Daal
1/4 cup Channa Daal
1 tbs Urad Daal
1 tbs Whole Moong Daal
1 1/2 tsp Chili powder
2 tsp Coriander powder
2 tsp Dry Mango Powder
1 tsp Cumin seeds
2 tsp lemon juice / 1/2 tsp Tamarind paste
3 split green chillies
3 tbs Ghee
2 Bay Leaves
Salt to taste
To Grind (Masala Powder)
3 Black Cardamom
Cinnamon stick 1/2 “
1 tsp Fennel seed
Bhaati Recipe :
1 1/2 cups Wheat Flour
3 tbs Semolina ( Rawa)
2 tbs Besan ( Bengal Gram Powder)
1 tsp Ajwain
1/2 tsp sugar
1/2 cup milk
4 tbs melted Ghee
Salt to taste
Preparation of Daal :
1. Pressure cook all the daal in 4 cups of water till they become tender.
2. Heat 2 tbs ghee in a pan add cumin seeds and turn off the gas( so that masala which we add should not burn) ,green chili,asfoetida ,Bay Leaves,Masala powder,coriander powder.
3.Then add the boiled Daal and add Amchur powder, Lemon juice and salt as per your taste.
4.Garnish with 1 tbs ghee and Cilantro Leaves.
Preparation of Bhaati :
1.Mix all the dry ingredients including the salt.
2.Mix 2 tbs ghee and knead dough with milk
3.Make equal number of circular balls and press little in middle with a fork.
4.Drop these bhaati bolls in boiling water and cook for 15 minutes under high flame.
5.After they are cooked drain water and bake them in pre-heated oven ( 400 F) turning them occasionally.
6. After they are done ,break them little n pour melted ghee or butter on top.
